Gluten Free Tahini Chocolate Chip Cookies
I didn't have coconut sugar and used regular sugar, which worked fine. I also used more chocolate chips in place of 1/4 c cacao nibs. The size of the chocolate chips and walnut pieces were a little large and presented some issue getting the cookies to stick together, so I might suggest making sure your walnuts and perhaps even your chocolate chips are extra chopped.
Tahini chocolate chip cookies
Ingredients
- 1 cup tahini (or almond butter)
- 1/2 teaspoon cinnamon
- 1/2 cup coconut sugar
- 2 tablespoon ground chia, mixed with 1/3 cup water
- 1 cup 100 percent, GLUTEN FREE rolled oats
- 1 cup coconut flakes, unsweetened
- 1/4 cup raisins
- 1/4 cup cacao nibs
- 1/4 cup chocolate chips
- 1/3 cup walnuts, chopped
- 1 pinch sea salt

Homemade Bean & Quinoa Burgers
I tried a new Bean & Quinoa Burger recipe that has a healthy dose of cilantro, but contrary to Grampa's opinion, they do not taste like death. :) Though I decreased the amount of cumin & cilantro the recipe calls for, I think they're great, and go well with any sort of bun or wrapped in a lettuce "bun".
Bean & Quinoa Burger
1c. cooked black beans
1c. cooked kidney beans (white or red)
1tbsp extra virgin olive oil
1tbsp ground chia seeds mixed with 3 tbsp water
1/2 c.red onion, diced
1/4 c. cilantro, stems removed and chopped
3 garlic cloves, minced
1c. quinoa flakes (can also use 100% pure rolled oats)
1c. cooked quinoa
1tbsp chili powder
1tsp ground cumin
1/2tsp sea salt
1/2 tsp fresh ground black pepper
In a small bowl, mix chia with water and let sit for a minute or two until a gel forms. In a food processor, add beans and puree until smooth. Then add chia mixture, cilantro, onion, oil, garlic, salt, chili powder, cumin, sea salt and pepper and pulse until combined.
Mix quinoa and quinoa flakes until the mixture is sticky and holds together. Divide mixture into patties (I made 7 patties). Grease a grill pan with coconut oil and cook on high for about 8 minutes each side.
Gluten-free, dairy-free and YUMMY!! Garnish with avocado, mustard, lettuce, etc... as you would any other burger. Enjoy!

Day 120... Eating, Med School and a Household Notebook
Eating...I had my 120 day visit last week with my doctor (Eastern Medicine, Homeopath, Chiropractor) and tested as clean as I ever have.
Dr. Jeff Robinson then tested to see which multivitamins my body "liked" the best. I have had trouble with getting nauseous and throwing up with vitamins my whole life, but the herbs and supplements that I get from Dr. Jeff (from Thorne) have never given me a problem. I can even take them on an empty stomach, which has always been unheard of for me.
Med School...I am also venturing into the territory of getting my last pre-reqs to apply to medical school. My first two classes are summer term courses which means I'm in lecture and lab 4 days/week.
This leads to another level of doing life in a new way. For the last four months I've been the lion's share of the cooking, as I've needed to try new recipes and modify them. With me going back to school, my partner and I will need to share the cooking duties.
Hence, I started a Household Notebook (it's actually a 3-ring binder).
It has a section for weekly menus, shopping lists, freezer and pantry inventories, monthly chore list and seasonal project lists (e.g. trim/thin trees before monsoon season begins in mid-June). I found printable calendars and such, here.
We're starting by planning dinners, and I've added a pocket folder to store recipes needed for the week.
Anyone else have resources for planning life and food? Please post 'em or send me the link - I'm happy to link up.
Grateful...I am grateful to have taken the last four months to really figure this out, to feel EONS better and to launch into a new way of life. I think there are many people out there like me with sensitivities and many more with major food allergies. If that is you, then the points below are probably very similar and parallel to what you do each day to navigate your life. If you're curious, here are a few of the things my 'new' way of life involves:
- Navigating life without caffeine. I started drinking coffee as a teenager, and probably haven't know how much sleep I truly need my entire adult life. Turns out my body likes 8-9 hours of sleep per night, which has been tough to comply with so far.
- A lot of new recipes at home. (See previous posts and the new Recipes page of this blog)
- Struggling to order anything besides salad and meat at restaurants when out with friends or celebrating
- Being very "planful" about taking snacks that I know I can eat everywhere to avoid blood-sugar crashes.(see the new Snacks page)
- Dairy
- Combination of dairy & wheat
- Caffeine
- Solanines (Solanaceae Family: potatoes, tomatoes, eggplant and all things called "pepper" - cayenne, chili, (Not black pepper), green pepper, hot pepper(sauce), paprika, pimiento, red pepper)
- Wheat
- chocolate
- Eggs
- Corn

Changing Thoughts

Being someone who lives in the midwest, I had NO idea there were storms like this in AZ. I thought it didn't rain much at all in the desert!? Just when I thought I knew something...I find a fault in my thinking...
I was then told by my colleage (who lives in AZ),"Oh, no...we have a monsoon season."
WRONG! Because the weather patterns move from west to east in Minnesota, I automatically assumed the weather would move similarly in AZ.
In Arizona, the weather patterns move from east to west. The storms on the radar that were west of us were traveling west and were the very storms that we had already pounded us.
Sometimes we take this "change" well. We're able to be flexible, and we're able to endure the 'pain' of these new thoughts. (and yes, there really is pain involved...I'll leave that topic for another post).
Oftentimes, however, we dig our heels in to try finding SOME WAY to keep our thoughts the way they are. "No, my family really IS judgemental." "No, my spouse really IS incapable of paying me the attention I want. "
In reality, by setting aside our "scheme of things" for even a moment, we can let in another way of looking at things. This can change the way we think, the way we see things, and perhaps even the way we put together our scheme of things. i.e. By setting aside my Minnesota scheme of things I could think in a new and different way about being in Arizona.

Meditation Workshop - A Success!
~ A group of women had a unique opportunity to study with a Vedic Master June 27 & 28, 2009 at the Woman's Club of Minneapolis! ~
Joan Dickenson, M.Ed, RYT, traveled to Minnesota from Florida to make a special appearance in the Twin Cities to teach Primordial Sound Meditiation - the style taught by Dr. Deepak Chopra and Dr. David Simon at the Chopra Center.
Practiced for thousands of years, meditation is a tool for rediscovering the body's own inner intelligence. We each had a private ceremony with Joan to receive our Primordial Sound meditation - which was based on our specific date, time and place of birth. Thinking about ourselves as "multi-dimensional beings" and becoming intimate with the various dimensions of our nature, we learned, is what enables us to live with vitality, creativity and happiness.
Just like we wash our clothes, clean our homes, and wash bodies - meditations is a way to wash our minds. So the purpose of meditation is not to have some sort of "high" experience DURING the meditation, rather it is to experience that peace and calmness and "high" for the other 23 hours of the day.
I thought I had been meditating before...I would sit on my yoga mat after my home yoga practice and...well...I would sit there. I didn't even know if what was happening actually was "meditation." And I didn't feel like anything was different in the rest of my day.
Since the end of June, my own meditation practice has come to me effortlessly and beautifully. I use my mantra and
For me, with practicing meditation I am able to:
- manage and have less stress
- nurture better relationships
- touch my inner peace
- have less anger control me
- enjoy nature with more alive.ness
- be more light-hearted
- be more detachment - can just let things go that would have bothered me before
- experience more connectedness to Spirit and that "river of peace" that flows through each moment
- experience more self-acceptance

5 Tips To Build Your Fan Club

One of the questions my clients ask is how to get people to notice them in the midst of the millions of marketing messages that zips past us everyday. Grabbing someone's attention requires more than a glitsy website and a catchy message.
You must understand EXACTLY who your customers are. You have to feel their pain and offer solutions to them that solve their problems.
Check your marketing plans against these 5 tips. Fill in whatever is missing or needs a boost, and create your own raving fan club!
1. Identify the values and characteristics of your perfect customers. What do they hold in high regard? Make a list of everything your customers want, that you provide. Make sure the items on your list are high priority items for them. People invest in what they value. Make sure your target market values what you offer. If not, you may want to switch markets, or fine tune your offerings.
2. Let your IDEAL customers say "yes"! When marketing your services talk about the benefits of what you do. Use emotion and feelings to describe the results people receive. Don't waste time explaining your services. No one cares about the materials used to make their car when they are off to a family occasion or fun night out on the town. They want the ride to be smooth. Talk about smooth rides rather than belted radials.
3. Give your customers want they want from you. Be who they expect you to be. Show them the side of you that motivates and encourages them to work with you. Be the person they expect to receive the highest quality experiences from. Let them see beyond your marketing and give them a glimpse of your personality.
4. Amplify your strengths to really stand out in the crowd. What are those natural strengths and ability that you take for granted. This is where your gold lies. What your strength's are is less important than you understanding them and using them to help others! Are you a natural at problem solving? Can you see solutions in unique ways? Maybe you have an eye for talent. Whatever you are great at, plug into it and use it to provide your own unique skills as a service.
5. Do one thing that is big, bold, and beyond what you thought you could do. What would your customers like to see from you, that you would love to grow into, yet have not yet had the courage to say yes to? Go for it. Think big and be big. Everyone loves courage. A landmark UCLA study suggests friendships between women are special. They shape who we are and who we are yet to be. They soothe our tumultuous inner world, fill the emotional gaps in our marriage, and help us remember who we really are. By the way, they may do even more. ]
Scientists now suspect that hanging out with our friends can actually counteract the kind of stomach-quivering stress most of us experience on a daily basis. A landmark UCLA study suggests that women respond to stress with a cascade of brain chemicals that cause us to make and maintain friendships with other women. It's a stunning find that has turned five decades of stress research---most of it on men---upside down. Until this study was published, scientists generally believed that when people experience stress, they trigger a hormonal cascade that revs the body to either stand and fight or flee as fast as possible, explains Laura Cousin Klein, Ph.D., now an Assistant Professor of Biobehavioral Health at Penn State University and one of the study's authors. It's an ancient survival mechanism left over from the time we were chased across the planet by saber-toothed tigers.
Now the researchers suspect that women have a larger behavioral repertoire than just fight or flight; In fact, says Dr. Klein, it seems that when the hormone oxytocin is release as part of the stress responses in a woman, it buffers the fight or flight response and encourages her to tend children and gather with other women instead. When she actually engages in this tending or befriending, studies suggest that more oxytocin is released, which further counters stress and produces a calming effect. This calming response does not occur in men, says Dr. Klein, because testosterone---which men produce in high levels when they're under stress---seems to reduce the effects of oxytocin. Estrogen, she adds, seems to enhance it.
The discovery that women respond to stress differently than men was made in a classic "aha" moment shared by two women scientists who were talking one day in a lab at UCLA. There was this joke that when the women who worked in the lab were stressed, they came in, cleaned the lab, had coffee, and bonded, says Dr. Klein. When the men were stressed, they holed up somewhere on their own. I commented one day to fellow researcher Shelley Taylor that nearly 90% of the stress research is on males. I showed her the data from my lab, and the two of us knew instantly that we were onto something.
The women cleared their schedules and started meeting with one scientist after another from various research specialties. Very quickly, Drs. Klein and Taylor discovered that by not including women in stress research, scientists had made a huge mistake: The fact that women respond to stress differently than men has significant implications for our health. It may take some time for new studies to reveal all the ways that oxytocin encourages us to care for children and hang out with other women, but the "tend and befriend" notion developed by Drs. Klein and Taylor may explain why women consistently outlive men. Study after study has found that social ties reduce our risk of disease by lowering blood pressure, heart rate, and cholesterol. There's no doubt, says Dr. Klein, that friends are helping us live longer.
In one study, for example, researchers found that people who had no friends increased their risk of death over a 6-month period. In another study, those who had the most friends over a 9-year period cut their risk of death by more than 60%.
Friends are also helping us live better. The famed Nurses' Health Study from Harvard Medical School found that the more friends women had, the less likely they were to develop physical impairments as they aged, and the more likely they were to be leading a joyful life. In fact, the results were so significant, the researchers concluded, that not having close friends or confidants was as detrimental to your health as smoking or carrying extra weight.
And that's not all. When the researchers looked at how well the women functioned after the death of their spouse, they found that even in the face of this biggest stressor of all, those women who had a close friend and confidante were more likely to survive the experience without any new physical impairments or permanent loss of vitality. Those without friends were not always so fortunate. Yet if friends counter the stress that seems to swallow up so much of our life these days, if they keep us healthy and even add years to our life, why is it so hard to find time to be with them?
That's a question that also troubles researcher Ruthellen Josselson, Ph.D., co-author of Best Friends: The Pleasures and Perils of Girls' and Women's Friendships (Three Rivers Press, 1998). The following paragraph is, in my opinion, very, very true and something all women should be aware of and NOT put our female friends on the back burners.
Every time we get overly busy with work and family, the first thing we do is let go of friendships with other women, explains Dr. Josselson. We push them right to the back burner. That's really a mistake because women are such a source of strength to each other. We nurture one another. And we need to have unpressured space in which we can do the special kind of talk that women do when they're with other women. It's a very healing experience...

What does you/your business offer? In the process of life people sometimes lose their way, get stuck, and lose track of their dreams and sometimes even who they really are. - What inspired you to be a business owner/entrepreneur:
- My own journey of wanting to have more fun, enjoy life and explore who I really am, allow that part of me to reveal itself and understand where I fit “IN”. I am an experimenter and creative and intuitive type that likes to try many things. I like to have a wide array of people around me and never really fit in to any one particular group or mold. It’s taken me a lot of years to embrace myself for who I am. I want to inspire and guide others to the same!
- What type of client/service/product is your “Sweet Spot”?
- People who are in transition and really curious about what that inner calling is. Also people who are curious about what has brought them to this point in their life that is suddenly re-kindled – often from childhood. Most of these individuals are helpers and healers and are just discovering that about themselves. They have new work – their true work to do now. I assist in their own healing process, so they can move about more freely and embrace themselves!
- What are the advantages of working in this sweet spot?
- It comes naturally and easily. Plus it’s needed in this current environment.
- I know that “No Matter What you Think you Are, You Are ALWAYS more than that!” It’s one of the therapeutic coaching principles from the Meta and so true.
- Why I exist –
- I’ve been told that I’m a healer/nurturer and I agree with that. However, more than that, I believe that I exist to provide individuals the time and space to be guided to their best selves, so they can do their own healing and live their fullest life. Everyone already has that innately inside them already and sometimes that inner light just needs to be dusted off or the overgrown path re-discovered again. It’s been there all along, I help them re-illuminate it or clear it.
- Why I am successful –
- I’m warm, welcoming, calm and patient as well as light-hearted and fun. I love to play, explore and watch the process unfold as I gently guide and work with individuals.
- I love people!
- How do you add value to your client’s lives or make their lives easier?
- I allow them to “BE” who they are and offer a safe and nurturing place for that to unfold. I also connect people to each other through the classes and workshops I teach so that they realize, “hey, I’m not alone in all of this.” There’s actually a community out there of like minded individuals.
- Talk some about what you want to accomplish in your business for clients and the community?
- I want to be a resource for my clients not only through the work we do together but also to connect them with other practitioners, websites, books, etc to assist and support them on their path – whatever that is.

I am in the process of narrowing my niche and really focusing in on how to better serve the community and my clients. I’m in the development stage, stay tuned. I’ve got lots coming down the pike.
- What are your future ambitions/goals/? To travel and host workshops outside of the Twin Cities, California, Colorado, Northern Minnesota, etc. I have definite plans to expand to Colorado.
- Besides offering valuable service/products, how else do you consciously add value to your business, clients and yourself holistically?
- Continually learning, reading, networking and working on myself. My clients are really an extension of myself and the continually bring me opportunities to grow and learn more about who I am.
- I also strive to be an example. I believe that life is meant to be enjoyed, spent with friends and family, exploring, learning and growing. I just spent a month in Colorado because last year I set the intention to do that. I honored that intention, even though I had a lot going on in my life, moving into a new office, etc. I gave myself that time and it was much needed. I encourage others to honor their intentions whatever they may be.

New Study Reveals Meaning Trumps Money...Significance for Life and Work?

In the face of transitions and obstacles, large and small, there are some major themes that many of my clients - individuals or businesses - revisit over and over:
- Feeling in limbo/not knowing what direction to go
- Wanting to do/be something that matters
- Wanting to make a difference, belong and be important in the world.
Out in January 2009, the MefLife Mature Market Institute (MMI) released a new groundbreaking study entitled: Discovering what Matters; Balancing Money, Medicine, and Meaning. MMI applied a market research approach to the philosophical concept of "purpose" based on the work of Richard Leider and his best-selling book with co-author David Shapiro, Repacking Your Bags.
The study found the "Purpose Matters" " Regardless of age, gender, financial status, or life stage, the majority of people assign the most importance to Meaning-related activities and, above all else, spending time with friends and family. "
However, the study did clearly show that priorities change with age. So, for those of still in midlife, who want work we love, but also want work that financially supports the life we live, it is quite expected that we will wrestle with whether it is still important for us to pursue financial stability first, and purpose second.
The study does suggest otherwise….yes, even for those in mid-life, in-transition and self-empoloyed.

Ten Tips for Thriving in this Economic Winter

Well, you asked for some quick, easy-to-apply tips on how to thrive in this economic winter and on how to apply the knowledge you learned during our conversation... So here you go!
- Clearly define what inspires you.
There's a big difference between taking action out of inspiration versus desperation. Use this season as an opportunity to hibernate into the recesses of your own mind and define what you choose to create in your next spring. - Control your focus.
Energy flows where attention goes. Are you focusing on lack or opportunity? - Feed your mind.
What's your constant mental diet? Do you spend hours in front of the scare news or are you reading good books, attending more positive seminars, watching uplifting DVDs and listening to powerful CDs? - Strengthen your body.
Your physical health and vitality have a tremendous impact on your performance as well as your mental and emotional fitness. Exercise releases stress as well as strengthen your body and mind. - Inventory your friends.
Doom and gloom attracts more doom and gloom. Jettison those "energy vampires" around you and surround yourself with opportunity seekers. - Quiet your mind.
Take time to meditate daily and to slow down if only for a few minutes. Ten to fifteen minutes of meditation will relieve hours of stress and increase creativity and resourcefulness. - Rid your life of escapist activities.
Overindulgence in TV, sleep and alcohol only accelerate the problems you're attempting to avoid. - Make a daily gratitude list.
Focusing on all the good, gifts and God in your life puts you in the right line of thought, feeling and their subsequent actions, which will attract and create more good, gifts and God. - Change your attitude.
Realize that everything that's happened in your life thus far is here to serve you, teach you and help you grow. Find the lessons in your past results, forgive yourself for anything you could have done better and apply the lesson to move forward and create a better future. - Get resourceful.
For the next three days, go to a place where you can have uninterrupted time... Come up with 20 new ideas to grow your income, create new results and improve your life. You cannot leave your spot until you have twenty. And no editing! All ideas are good ideas. Do this for three successive days with 20 new ideas each day.
Now take your list of 60 unique ideas and pick the three to five most powerful and leveraged ones to put into action. Pick these three to five based on: ease of implementation, rate of return and speed of return.
And so during this winter season, remember: It's not about resources... there are plenty of them. It's about resourcefulness. Get resourceful and get busy.

Achieving Ultimate Success
What does success look like to you?
You might tell me success has everything to do with being financially wealthy. I would agree that financial abundance is a piece of being successful. And where else do you experience success in your life?
Consider success in,
-Your physical health,
-The health of your relationships,
-Your spiritual life,
-Your emotional and intellectual well-being.
Take a minute and jot down where you are experienceing success in your life right now.
Now, define what ULTIMATE success in your life would look like. Paint a picture in your mind and write down what success is to you:
-Physically
-Mentally
-Spiritually
-Relationally
-Financially
Make it specific and real in your mind - what is your ULTIMATE success in all areas of life?
REMEMBER: Success is a journey toward the life YOU choose. You will not "arrive" at some end-point of where you are finally "successful" because you are always growing, expanding and changing to be reaching to ever-greater heights.

What's LUCK got to do with it?
My world is vibrant and full. I am truly living my god-given life, and luck has absolutely NOTHING to do with it.Truly living your purpose is not about luck - it's about continually expanding and growing.
I attended a recent workshop in Chicago, called Harmonic Wealth Weekend. James Ray lead 500 of us through 30 hours of consciousness-expanding, life-giving work. He also shared a new acronym for luck:
L = Living
U = Under
C = Correct
K = Knowledge
And what is correct knowledge, you ask?
It's about consciously using the ever-present and unchanging laws of the universe. The Law of Perpetual Transmutation of Energy, The Law of Relativitly, The Law of Polarity, The Law of Cause and Effect, The Law of Rhythm, The Law of Gender. It's about understanding how big your mind is, that everything is 99.9999% energy, that energy flows from high to low, and that energy cannot be created or destroyed.
Everything that ever was and ever will be is already created. So what is it that you are focusing your attention on in your life.
How are you using the laws to create the life of your dreams?
As James would say, "When would NOW be a good time to step forward in faith to live your life of limitless possibilities?"
